This healthy carrot cake is perfectly… with cashew and orange icing

Ingredients
3 cups grated carrots
2 cups almond flour
2 teaspoons baking powder
4 eggs
1/4 cup olive oil
1/4 cup honey
2 teaspoons vanilla essence
2 teaspoons cinnamon
3/4 cups pre-soaked sultanas

Icing
2 cups cashews
1 teaspoon vanilla essence
3/4 orange juice

Directions
Mix all ingredients together and poor into a tin lined with baking paper. Bake on 160 for an hour. Let the cake cool down before removing it from the tin.

For the icing, add cashews, orange juice and vanilla into a powerful food processor and process until thick and smooth.

Top the cake with cashew icing and enjoy!
