Dough:
Mix with a spoon
3 cups flour
2 tsp baking powder
2 tsp sugar
1/4 tsp fine salt
Add
3 full tblsp butter
Start mixing with your hands, then add:
1 cup warm water
Knead well
Chicken :
Cut 500 g chicken fillet in cubes. Wash and keep aside. Marinate in:
1 tblsp schezwan sauce/chutney
1 tsp garlic
1 tblsp lemon juice
1 tsp tandoori masala
Salt and pepper to taste
1 tsp cumin/zeera powder
1 tsp paprika ( kashmiri red chilly)
1 tblsp any chicken spice
METHOD
Mix everything well till chicken is nicely coated. Marinate for 1 to 2 hours then cook in butter.
Roll and partially cook the dough pieces into medium size rotis. Keep them soft by covering with damp cloth.
Assembling: make a 1/4 cut in the middle and add mayonnaise mix( add any chilli sauce to mayo) . In the next portion add chicken then the next one add salad and lastly add cheese. Fold in quarters and make a pocket style wrap. Grill on a pan with little butter and serve.
