This pie is a delicious recipe for leftover roast turkey.

Ingredients (4 servings)

1 tablespoon vegetable oil
1 onion sliced
1 garlic clove crushed
1 carrot chopped
250 grs roast turkey shredded
1 red chili chopped
200 ml white wine
100 mol chicken stock
1 egg for egg wash the pastry
300 grams shortcrust pastry

(although I put a link for shortcrust pastry dont worry you can buy shortcrust pastry or other in groceries and use, the idea is dont works so much at Christmas, anyway this is a good recipe)

For veggie stuff

2 zuchinni grated or chopped
1/2 cup little green peas (frozen)
1/2 cup of chopped corn (frozen)
1 tablespoon oil
1 garlic clove.
1 onion chopped
1 carrot chopped
200 ml white wine
1red chilli chopped

(the recipe is the same only change the ingredients)

Method

Heat the oil in a frying pan over a medium heat.
Fry the onions and garlic by 4 to 5 minutes or until
golden brown and softened.

Add the remaining ingredients, (carrot chopped, turkey, red chili, green peas.white wine and chicken stock)
bring the mixture to the boil and simmer for 20 minutes.
Set aside to cool.
Preheat the oven to 180°


Divide the mixture between four individual pie dishes.Cut the pastry into four pieces, each big enough to cover the pie dish.
Brush the edge of each dish with egg wash and cover with the pasttry.
Trim any excess pastry and brush the lid with remaining egg wash.

Cook for 20 to 25 minutes until the lid is crisp and golden brown.
