Spinach rice is one of the foods that we usually appreciate in maturity and the very frequent reason for confrontation at the table with children!
Now that we have the wisdom to understand its value as well as its deliciousness Put 1/4 cup of olive oil in a wide pot and saute until soft, 1 bunch of spring onion chopped, 1/2 bunch of dill chopped and 5-6 large white mushrooms cut into large pieces.
You add 1/2 cup of rice and 500 grams of fresh spinach and saute some more. Add 1 1/2 cups of hot water, 10 cherry tomatoes cut in half, 1 tsp. tomato paste, the juice of 1 lemon, salt, pepper and a little bukovo if you like hot food.
You simmer until the rice absorbs most of the liquid and towards the end you add 1/2 bunch of dill and taste if it needs more lemon. Serve with lemon zest on the plate.
